Nutritionist and health blogger, Danijela Unkovich, introduces a healthy raspberry ice cream recipe made entirely from a base of frozen bananas. Not only is this creamy soft-serve vegan but also it is free of refined sugars and packed full of antioxidants and vitamin C. The potassium from the bananas will help control your heart rate and blood pressure. The soluble dietary fiber contributes to keeping our bowels moving smoothly. The antioxidants and vitamin C will help prevent ageing and diseases to the body.

Raspberry Ice Cream
4 frozen bananas (peel, slice into coins and freeze overnight)
1 cup fresh/frozen raspberries
4 medjool dates, pitted
1. Add the frozen bananas into a food processor and blend. You may need to scrap down the sides with a spatula. The banana will transition from looking crumbly before going smooth. Sometimes I'll add a little water/milk to speed up the process.
- Once the banana begins to smooth out add in the raspberries and medjool dates and blend again until smooth.
- Enjoy either straight away for a soft-serve consistency or pop into freezer for an ice cream consistency.
